Roasted Veggie & Chicken Sausage Bowls

Simple, satisfying, and packed with flavor—perfect for easy lunches or a nourishing weeknight dinner.

Makes: 3-4 servings

Ingredients

  • 2 cups broccoli or cauliflower florets

  • 1 bell pepper, chopped

  • 1 cup cherry tomatoes

  • 1 small red onion, sliced

  • 1 large sweet potato, finely diced

  • 4–5 small yellow potatoes, finely diced

  • 1 pack chicken sausage (like Bilinski’s mild bell pepper), sliced

  • Avocado oil spray

  • Sea salt

  • Raw cheese (like Parmesan or feta), for topping

Instructions

  1. Preheat oven to 425°F. Line two baking sheets with parchment paper.

  2. Chop all veggies and dice potatoes into small cubes.

  3. Arrange yellow and sweet potatoes on one baking sheet, and cauliflower, broccoli florets, bell pepper, cherry tomatoes, red onion, and sliced sausage on the other.

  4. Lightly spritz with avocado oil and season with sea salt.

  5. Roast for 25–30 minutes, or until everything is golden and cooked through.

  6. Top with raw cheese and enjoy as-is or serve over a bed of arugula.
