Lemon Chia Seed Bread
Moist, bright, and packed with protein and fiber—this lemon loaf is a perfect afternoon snack or breakfast with a twist.

Ingredients
1½ cups oat flour
1 tsp baking soda
¼ tsp salt
2 tbsp chia seeds
Zest of 1 lemon
½ cup low-fat or nonfat cottage cheese
½ cup nonfat Greek yogurt
½ cup unsweetened applesauce
2 eggs
3 tbsp maple syrup
¼ cup fresh lemon juice
1 tsp vanilla extract
Instructions
Preheat oven to 350°F. Line a loaf pan with parchment paper or lightly grease.
In a large bowl, whisk together oat flour, baking soda, salt, chia seeds, and lemon zest.
In a blender or separate bowl, mix cottage cheese, Greek yogurt, applesauce, eggs, maple syrup, lemon juice, and vanilla until smooth.
Pour wet mixture into dry ingredients and stir just until combined.
Let the batter rest for 5–10 minutes so the chia seeds can thicken it up.
Pour into the prepared loaf pan and smooth the top.
Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
