Cinnamon Protein French Toast

A blood sugar–friendly take on a classic, using sourdough and Equip’s Cinnamon Roll Prime Protein for a nourishing, high-protein start to the day.

Makes: 2 servings

Ingredients

  • 4 slices of organic sourdough

  • 2 eggs

  • ¼ cup milk of choice (I like to use unsweetened vanilla almond milk)

  • 2 tbsp half and half

  • 1 scoop @equipfoods Cinnamon Roll Prime Protein

  • 1 tsp ground cinnamon

  • Ghee or butter, for cooking

Instructions

  1. In a shallow bowl, whisk together the eggs, almond milk, half and half, cinnamon, and protein powder until smooth. You may want to use a hand frother to fully mix in the protein powder.

  2. Soak each slice of sourdough in the mixture for a few minutes per side, making sure it’s fully coated.

  3. Heat ghee or butter in a skillet over medium heat.

  4. Cook each slice for 2–3 minutes per side, or until golden brown and cooked through.

  5. Serve warm with your favorite toppings — I love grass-fed ghee or butter, a drizzle of maple syrup, or berries.
